Guided by Executive Chef Victor Palma, our culinary team draws inspiration from the region’s fresh produce and on-site vineyard and brings forth a dining experience unlike any other.


Overlooking the hills of CordeValle and the golf course, One Iron Bar serves contemporary California cuisine utilizing local ingredients for breakfast, lunch, and dinner, as well as specialty drinks and a diverse selection of wines and international spirits. Guests can enjoy an aperitif or martini in the cozy, full-service bar, which features hand picked vintages from Clos LaChance Winery.


The resort’s signature restaurant presents fresh local cuisine including classic Italian dishes with contemporary Californian inspiration. Chef Palma serves a simple yet succulent contemporary California menu infused with traditional Italian influences.


The Lion’s Peak Grill at CordeValle is the ultimate place to enjoy relaxed dining in an outdoor setting. Enjoy a quick continental breakfast before your first 18 of the day, or select a savory lunch to be delivered while you’re out on the course. And once you’ve finished, beverages and cocktails are served on the patio until sunset.

Executive Chef Victor Palma

Victor Palma, Executive Chef of Rosewood CordeValle, in San Martin, brings a world of culinary experience to the 1,700-acre Northern California golf and spa retreat. Chef Palma’s passion for local agriculture and organic produce inspires his contemporary California menus.

With CordeValle’s idyllic location in the foothills of the Santa Cruz Mountains, Chef Palma has easy access to the plethora of local agriculture and organic produce that inspires his menus. Chef Palma is also working to create incredible culinary experiences for meetings and group sessions through the new Farmer’s Market breakout session. This unique initiative invites guests to experience unique cuisine through an educational meal that showcases regional and indigenous ingredients of the Northern California landscape.
